· 2 T olive oil
· 4 oz. crumbled feta cheese
· 2 tsp lemon juice
· 2 cups chopped vegetable.
Instructions:
1. Boil pasta in 4-6 quarts of water for 6-8 minutes, stirring occasionally. Strain the pasta and set it aside.
2. In a large bowl, stir together pasta, seasoning packet, olive oil, lemon juice, and feta cheese.
3. Add chopped vegetables. We recommend trying tomatoes, Kalamata olives, artichoke hearts, red onion, and bell pepper. Chill before serving.
